Ingredients
Bitter Gourd
- 2 large Bitter Gourd about 4 cups, cut into 1-inch strips
Marinade
- 1/2 tsp Turmeric Powder
- 3/4 tsp Chili Powder
- 1/2 tsp Coriander Powder
- Salt as needed
For Frying
- Oil for deep frying
Pachadi Ingredients
- 1/2 tsp Mustard Seeds
- 2 tbsp Ginger minced
- 2 tbsp Garlic minced
- 15 Curry Leaves
- 3-4 Chillies green, slit lengthwise
- 1 1/2 tsp Kashmiri Chili Powder
- 1/2 tsp Fenugreek Seeds dry roasted and coarsely ground
- 1 pinch Asafoetida
- Salt as needed
- 3 tbsp Sesame Oil
- 1 1/2 tbsp Lemon Juice from 1 large lemon
- 1/8 cup Honey
Instructions
- Wash the bitter gourds, cut them, and remove the seeds completely. Slice into approximately 1-inch strips.
- In a bowl, combine the bitter gourd strips with turmeric powder, salt, chili powder, and coriander powder. Marinate for at least 30 minutes. This allows the spices to penetrate the gourd and mellows the bitterness.
- Mince the ginger and garlic. Slit the green chilies lengthwise.
- Dry roast the fenugreek seeds until fragrant. Then, coarsely grind them using a mortar and pestle.
- Heat oil in a deep pan for deep frying. Fry the marinated bitter gourd strips until they are golden brown and the sizzling sound subsides. This ensures they are cooked through and slightly crispy.
- In a separate pan, heat sesame oil. Add mustard seeds and let them splutter. Add curry leaves and green chilies. Sauté briefly until fragrant.
- Add the minced ginger and garlic to the pan. Sauté until lightly golden. Turning off the heat, add Kashmiri chili powder, asafoetida, salt, and ground fenugreek powder. Stir to combine, allowing the spices to bloom in the residual heat. This prevents burning and preserves their flavor.
- Add the fried bitter gourd strips to the pan with the spices. Turn the heat to low and gently mix, allowing the flavors to meld.
- Add lemon juice and honey. Stir gently to combine. Turn off the heat immediately to prevent the honey from caramelizing excessively.
- Transfer the pachadi to a clean, dry container. Let it rest for 1-2 hours for the flavors to deepen and blend. This enhances the overall taste.

- Adjust the chili powder and green chilies according to your taste.
- Since salt is added twice, adjust it accordingly.
- After adding lemon juice and honey, do not allow the mixture to boil, as this will alter the taste and add extra bitterness to the dish.
