Ingredients
For the Potato Filling
- 2 Potato medium-sized, russet or yukon gold recommended
- 1/2 tsp Mango Powder amchur, dry
- 1/2 tsp Pepper black, crushed, freshly ground, or 1/4 teaspoon black peppercorns
- 1/4 tsp Chili Powder adjust to your spice preference, red
- 1 Chili finely chopped, green, or more to taste
- 1/4 tsp Garam Masala
- 1/4 tsp Cumin Seed ground cumin, or 1/2 teaspoon cumin seeds, toasted and ground
- 1/2 tsp Chaat Masala
- 2 tbsp Coriander chopped (cilantro), fresh
- 1 1/2 tsp Salt or to taste
For the Bread Rolls
- 6 slices Bread brown, or multigrain bread; use sturdy slices that won't easily tear, white
- 2 cup Vegetable Oil or enough for frying
Instructions
Prepare the Potato Filling
- Boil the potatoes until tender. Peel and mash them while still warm.
- Add the dry mango powder, black pepper, red chili powder, chopped green chilies, coriander, garam masala, cumin, chaat masala, and salt to the mashed potatoes.
- Mix the filling thoroughly until all ingredients are well combined. Taste and adjust seasonings as needed.
Assemble the Bread Rolls
- Take a slice of bread and lightly dampen it with water, squeezing out excess moisture.
- Place a spoonful of the potato filling in the center of the bread slice.
- Roll the bread tightly, tucking in the sides to create a neat roll.
- Repeat with the remaining bread slices and filling.
Fry the Bread Rolls
- Heat vegetable oil in a large skillet or kadai over medium heat.
