Ingredients
Meatballs
- 3/4 cup Chicken ground
- 1/2 cup Packed Spinach finely chopped, fresh, moisture removed
- 1/2 cup Panko Breadcrumbs
- 2 clove Garlic minced
- 1/2 inch Ginger minced
- 1 1/2 Chiles finely chopped, green
- 2 tbsp Mint finely chopped, fresh
- 2 tbsp Coriander finely chopped, fresh
- 2 tbsp Parmesan Cheese grated
- 2 tsp Tandoori Masala
- 1 1/2 tsp Salt or to taste
- 1 tsp Olive Oil
- Cooking Oil for greasing baking pan
Sauce
- 1 cup Tomato Ketchup
- 1/2 cup Honey or bbq sauce
- 1 cup Water
- 1 inch Ginger finely chopped or grated, peeled
- 9 clove Garlic minced
- 1/4 cup Onion Paste or grated onion
- 1 1/2 tbsp Tandoori Masala
- 2 tsp Kashmiri Chili Powder for color, red
- 1/2 tsp Chili Powder or to taste, red, such as cayenne
- 1/2 tsp Garam Masala
- 1/2 tsp Pepper black, ground
Instructions
- Preheat oven to 355°F (180°C). Lightly grease a 9x13 inch baking pan.
- In a mixing bowl, combine the ground chicken, spinach, panko breadcrumbs, garlic, ginger, green chiles, mint, cilantro, parmesan cheese, tandoori masala, salt, and olive oil.
- Mix thoroughly until all ingredients are well combined.
- Lightly oil your hands. Roll the mixture into medium-sized meatballs.
- Arrange the meatballs in the prepared baking pan, spacing them about an inch apart. Freezing the meatballs briefly helps them hold their shape during baking. Cover the pan and freeze for 8-10 minutes.
- Remove the meatballs from the freezer and uncover. Bake for 25-30 minutes, or until cooked through and no longer pink inside.
- While the meatballs are baking, prepare the sauce.
- In a saucepan, combine the tomato ketchup, honey (or BBQ sauce), water, ginger, garlic, onion paste, tandoori masala, Kashmiri red chili powder, red chili powder, garam masala, and black pepper.
- Simmer over low heat, stirring occasionally, until the sauce thickens.
- Add the baked meatballs to the sauce and simmer for 5 minutes, coating them evenly.
- Serve hot over spaghetti, rice, or with crusty bread.
