Ingredients
For the Paneer Gravy:
- 250 gm Cottage Cheese indian cottage cheese
- 1 medium Onion finely chopped
- 2 Tomatoes finely chopped
- 1 tbsp Ginger-Garlic Paste
- 2 Chilies green, slit lengthwise
- 1 tsp Coriander Powder dhania
- 1 tsp Garam Masala
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Chili Powder red
- 1 tbsp Cream
- 1 Bay Leaf tej patta
- 1.5 tsp Salt or to taste
- 1/4 cup Milk
- 2 tbsp Vegetable Oil for frying
Instructions
Prepare the Paneer Gravy
- Heat vegetable oil in a pan. Add the bay leaf and chopped onions. Cook for a few minutes until softened.
- Add ginger-garlic paste and cook for another 2-3 minutes until the raw smell disappears. Add green chilies and chopped tomatoes; cook until softened.
- Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook until the mixture releases oil from the sides.
- Add half of the grated paneer. Cut the remaining paneer into small cubes and fry until golden brown. Add the fried paneer cubes to the gravy.
- To create a rich gravy, add milk instead of water. Simmer until slightly thickened.
- Stir in cream and fresh coriander leaves. Mix well. The paneer gravy is ready.
Assemble and Serve the Kulcha Bites
- Heat a nonstick tawa (griddle) with butter. Cook the kulchas until lightly browned on both sides.
- Stuff the kulchas generously with the paneer gravy. Top with pickled onion rings.
- Cut each stuffed kulcha in half. Repeat with the remaining kulchas.
- Serve hot with green chutney and extra pickled onions.
