  • 2.5 Kulchas
  • 1/2 cup Onions for garnish, pickled, rings
  • 2 tbsp Butter for toasting kulchas
  • Chutney to taste, green
  • 1/4 cup Coriander finely chopped, for garnish

Instructions
 

Prepare the Paneer Gravy

  • Heat vegetable oil in a pan. Add the bay leaf and chopped onions. Cook for a few minutes until softened.
  • Add ginger-garlic paste and cook for another 2-3 minutes until the raw smell disappears. Add green chilies and chopped tomatoes; cook until softened.
  • Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook until the mixture releases oil from the sides.
  • Add half of the grated paneer. Cut the remaining paneer into small cubes and fry until golden brown. Add the fried paneer cubes to the gravy.
  • To create a rich gravy, add milk instead of water. Simmer until slightly thickened.
  • Stir in cream and fresh coriander leaves. Mix well. The paneer gravy is ready.

Assemble and Serve the Kulcha Bites

  • Heat a nonstick tawa (griddle) with butter. Cook the kulchas until lightly browned on both sides.
  • Stuff the kulchas generously with the paneer gravy. Top with pickled onion rings.
  • Cut each stuffed kulcha in half. Repeat with the remaining kulchas.
  • Serve hot with green chutney and extra pickled onions.
