Ingredients
 

For the Soufflé

  • 2 tbsp Coconut Oil
  • 1 lb Potato boiled and mashed, russet or yukon gold
  • 1/2 cup Milk whole milk recommended
  • 1 cup Cheese grated cheddar or gruyere
  • 2 Egg at room temperature, separated
  • 1.5 tbsp Parsley freshly chopped
  • 1 tbsp Spring Onion finely chopped
  • 1 tbsp Bell Peppers finely chopped (any color)
  • 1 pinch Turmeric for color, optional, powder
  • 1.5 tsp Salt or to taste
  • 1/2 tsp Pepper black, freshly ground
  • 1 tsp Paprika smoked paprika recommended

Prepare the ramekins

  • Grease six ramekins with 1.5 tbsp coconut oil. Coat with breadcrumbs, ensuring even coverage. Set aside.

Preheat the oven

  • Preheat oven to 400°F (200°C).

Combine the potato mixture

  • In a large bowl, combine the mashed potatoes, spring onions, bell pepper, parsley, 2 egg yolks, salt, pepper, paprika, and cheese. Mix thoroughly.

Prepare the milk mixture

  • In a small saucepan, gently heat the milk and 2 tbsp coconut oil with a pinch of turmeric (optional) until the oil melts. Stir to combine.

Combine wet and dry ingredients

  • Pour the warm milk mixture into the potato mixture and stir until well combined.

Fold in the egg whites

  • In a separate clean bowl, beat the 2 egg whites until stiff peaks form. Gently fold the egg whites into the potato mixture until just combined. Be careful not to overmix.

Bake the soufflés

  • Spoon the potato mixture into the prepared ramekins. Garnish each with a sprinkle of fresh parsley and paprika.
  • Bake for 25-30 minutes, or until the soufflés are puffed up and golden brown.

  • Serve immediately.
