Ingredients
For the Paneer Filling
- 1 cup Cottage Cheese cubed
- 2 Onions chopped
- 1 cup Tomatoes chopped (roma tomatoes recommended)
- 2 Tbsp Tomato Sauce
- 2 Tbsp Mayonnaise
- 1 Tbsp Maggi Masala
- 1 Tbsp Soy Sauce
- 1 tsp Vinegar white
- 1 tsp Chili Flakes
- 1 Tbsp Coriander freshly chopped
- 1 tsp Oregano dried
- 1/2 tsp Salt or to taste
Instructions
- Heat 1 tablespoon of oil in a large pan or kadai over medium heat.
- Add the chopped onions and sauté until translucent and lightly softened. This builds a flavor base for the filling.
- Add the chopped tomatoes and cook for about 5 minutes, until they soften and release their juices.
- Stir in the tomato sauce, mayonnaise, and Maggi Masala. Mix well to combine.
- Add the soy sauce and white vinegar. These add depth and tanginess to the paneer filling.
- Gently fold in the cubed paneer. Be careful not to break the paneer.
- Add the chili flakes, dried oregano, and freshly chopped coriander. Mix well to distribute the flavors evenly.
- Season with salt to taste. Remove the pan from the heat.
- Take a kulcha and spread half of the paneer filling over one side. Spread salsa or your preferred chutney/sauce on the other half.
- Butter both sides of the kulcha. This helps create a crispy, golden-brown exterior.
- Grill the kulcha for 7-10 minutes, or until golden brown and heated through. You can use a panini press, grill pan, or even a tawa.
- Serve the hot Paneer-Stuffed Kulcha Sandwich immediately. It's delicious on its own or with a side of chai or coffee.
Recipe Notes
Good To Know
- If using an oven, grill the sandwich for 10 minutes at 150°C (300°F). Alternatively, use a grilled sandwich toaster for a quicker and easier option.
- For a smoky flavor, char the stuffed kulcha sandwich directly over an open flame for a few seconds per side.
- For a crispier texture, brush the kulchas with ghee or butter before grilling or toasting.
- Enhance the filling by adding chopped fresh coriander and a pinch of chaat masala to the paneer mixture.
- For lunchboxes, let the sandwich cool completely before wrapping to prevent sogginess.
Expert Tips
- Customize your filling: Experiment with different cheeses, vegetables, or even shredded meat to create your own signature kulcha sandwich.
- Serve with a side: Pair your kulcha sandwich with a refreshing yogurt dip, a tangy chutney, or a simple salad for a complete meal.
- Make it ahead: Prepare the paneer filling and kulchas in advance and assemble the sandwiches just before grilling or toasting for a quick and easy meal.
Storage Instructions
- Store leftover kulcha sandwiches in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven or on a skillet until warmed through.
