  • Combine all-purpose flour, baking soda, oil, sugar, salt, and yogurt in a bowl. Gradually add water, kneading until a soft, pliable dough forms. Let the dough rest for at least 30 minutes.

Make the Kulchas

  • Divide the dough into equal-sized balls. Roll each ball into a thin circle (like a chapati). Sprinkle with water. Cook on a hot griddle or tawa until lightly browned and puffy on both sides.

Prepare the Chole

  • In a pan, heat oil. Saute chopped green chilies and add turmeric powder, coriander powder, and red chili flakes. Stir in the boiled white peas, black salt, salt, garam masala (if using), and lemon juice. Simmer for 5-7 minutes, stirring occasionally. Garnish with fresh cilantro.
