Ingredients
For the Kulcha Dough
- 150 gm All-Purpose Flour maida
- 1/2 tsp Baking Soda
- 2 tsp Vegetable Oil refined
- 1/2 tsp Sugar
- 1 cup Yogurt plain, full-fat curd
- 1.5 tsp Salt or to taste
- 1 tsp Water as needed for dough consistency
For the Chole
- 1 cup Peas dried, soaked overnight and boiled until tender, white
- 2 tsp Coriander Powder roasted for enhanced flavor
- 1/2 tsp Chili Flakes adjust to your spice preference, red
- 1 tsp Salt kala namak, black
- 1 tsp Garam Masala optional, for extra flavor
- 1 tbsp Lemon Juice freshly squeezed
- 1/4 cup Coriander dhania
- 1-2 Chilies finely chopped, adjust to taste, green
- 1 tbsp Vegetable Oil for sauteing
- 1/2 tsp Turmeric Powder
Instructions
Prepare the Kulcha Dough
- Combine all-purpose flour, baking soda, oil, sugar, salt, and yogurt in a bowl. Gradually add water, kneading until a soft, pliable dough forms. Let the dough rest for at least 30 minutes.
Make the Kulchas
- Divide the dough into equal-sized balls. Roll each ball into a thin circle (like a chapati). Sprinkle with water. Cook on a hot griddle or tawa until lightly browned and puffy on both sides.
Prepare the Chole
- In a pan, heat oil. Saute chopped green chilies and add turmeric powder, coriander powder, and red chili flakes. Stir in the boiled white peas, black salt, salt, garam masala (if using), and lemon juice. Simmer for 5-7 minutes, stirring occasionally. Garnish with fresh cilantro.
