  • 1 cup Tamarind Juice from a large tamarind ball, or to taste
  • 3 tablespoons Sesame Oil gingelly oil
  • 1 tablespoon Jaggery adjust for sweetness, or to taste

Instructions
 

Prepare the Tempering

  • Heat gingelly oil in a wok or pan. Add mustard seeds, fenugreek seeds, and red chilies. Fry until the seeds splutter and the fenugreek seeds turn light brown.

Sauté Vegetables

  • Add the chopped onion and bell pepper to the wok. Sauté for about a minute until slightly softened.

Add Spices and Tamarind Juice

  • Stir in the sambar powder and turmeric powder. Pour in the tamarind juice and add salt. Bring to a boil.

Simmer and Thicken

  • Reduce heat and simmer the kuzhambu until it thickens slightly and the oil begins to separate from the gravy. This will take about 10-15 minutes.

Finishing Touches

  • Stir in the curry leaves and jaggery. Simmer for another minute. Taste and adjust seasoning as needed.

Serve

  • Remove from heat and serve hot with steamed rice and pappadums.
