  • Heat the gingelly oil in a pan over medium heat. This oil has a high smoke point, making it ideal for frying.

  • Add the mustard seeds, dried red chilies, and fenugreek seeds. Sauté until the mustard seeds begin to pop and the fenugreek seeds turn a light brown. This releases their aromatic oils.
  • Add the broken pappadum pieces to the pan. Fry until they turn golden brown and crispy. Remove them from the oil and set aside.

  • Add the sambar powder to the pan and fry for about 30 seconds until fragrant. Frying the sambar powder enhances its flavor.
  • Pour in the tamarind juice (or lemon juice) and add the jaggery, turmeric powder, asafoetida, and salt. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat and simmer until the gravy thickens slightly. This allows the flavors to meld together.
  • Add the curry leaves and stir. The curry leaves add a final burst of freshness.
