Mushrooms & Aromatics

  • 250 gm Mushrooms button, cremini, or mixed mushrooms; sliced
  • 1 medium Onion finely sliced
  • 1 tsp Asafoetida hing
  • 1-2 Chili finely chopped; adjust to taste, green

Spices & Seasoning

  • 1 tbsp Mango Powder amchur, dry
  • 1 tsp Pepper black, freshly ground, or to taste
  • 1-2 tsp Salt or to taste

Finishing Touches

  • 1 tbsp Oil vegetable or canola oil
  • 1 tbsp Coriander chopped; for garnish, fresh

Preparation

  • Clean and slice the mushrooms. Set aside.

Sautéing Aromatics

  • Heat the oil in a pan over medium heat. Add the asafoetida (hing) and green chilies; sauté for 30 seconds until fragrant, being careful not to burn the hing.

Cooking the Mushrooms

  • Add the sliced onions and sauté until golden brown (about 5 minutes). Add the mushrooms, black pepper, and salt. Cook, covered, with 1 tablespoon of water until the mushrooms are tender (about 5-7 minutes).
