  • 500 gm Jackfruit fresh or canned, young green jackfruit recommended; ensure it's properly cleaned and cut into bite-sized pieces

Prepare the Spice Blend

  • Dry roast cumin seeds, coriander seeds, cinnamon stick, bay leaf, and black peppercorns in a pan until fragrant. Grind into a powder using a spice grinder or blender.

Marinate the Jackfruit

  • In a bowl, combine the jackfruit pieces with lemon juice, the prepared spice powder, 1/2 tbsp oil, 1 tsp ginger-garlic paste, and green chilies. Mix well and let it marinate for at least 30 minutes.

Cook the Curry

  • Heat the remaining oil in a heavy-bottomed pan or pressure cooker. Add fenugreek seeds and asafoetida; sauté for a few seconds until fragrant.
  • Add sliced onions and cook until golden brown. Stir in turmeric powder, coriander powder, and red chili powder; sauté for another minute.
  • Add the marinated jackfruit and sauté until slightly browned. Pour in 1/4 cup water, reduce heat to low, cover, and simmer for 15-20 minutes, or until the jackfruit is tender. If using a pressure cooker, cook for 2-3 whistles.

Garnish and Serve

  • Garnish with fresh coriander leaves and serve hot with steamed rice, naan, roti, or your favorite Indian bread.
