Prepare the Batter

  • In a large bowl, whisk together gram flour, rice flour, baking soda, asafoetida, turmeric powder, and salt.
  • Gradually add water, whisking continuously until a smooth, lump-free batter forms. The consistency should be similar to thick pancake batter. Adjust the water as needed.

Check Batter Consistency

  • Before frying, test the batter by dropping a small amount into hot oil. If it spreads flat, the batter is too thin; add more gram flour. If it forms thick clumps, the batter is too thick; add more water.

Fry the Boondi

  • Heat the oil in a deep wok or kadai to medium-high heat.
  • Using a perforated ladle (jalli karandi), scoop a spoonful of batter and gently spread it over the ladle to release small, round droplets of batter into the hot oil. Do this from a short height.
  • Fry until golden brown and crispy, turning occasionally. Remove with a slotted spoon and drain on paper towels.
  • Repeat until all the batter is used. Fry in batches to avoid overcrowding the pan.

Prepare the Garnish

  • Once the boondi has cooled completely, heat a small amount of oil in a pan. Sauté the cashews until golden brown and then add the curry leaves. Fry briefly and set aside to cool.

Combine and Serve

  • In a large bowl, gently mix the cooled boondi, red chili powder (adjust to taste), a pinch of asafoetida, and salt. Add the fried cashews and curry leaves. Mix well to combine evenly.
  • Your Kara Boondi is now ready to enjoy! Store it in an airtight container for up to a week.
