Ingredients
Garlic Preparation
- 100 clove Garlic peeled
Spice Blend
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder adjust to your spice preference, red
- 1.5 tsp Salt
- 1 tbsp Fenugreek Seeds also known as methi dana
Tempering & Oil
- 2 tbsp Mustard Oil
- 1 tsp Mustard Seeds rai
- 1/2 tsp Asafoetida hing
Acid
- 2 tsp Vinegar white
Instructions
Prepare the Garlic
- Microwave the peeled garlic cloves for 4-5 minutes. Let cool completely at room temperature for at least 1 hour.
Dry Roast and Grind Fenugreek Seeds
- Dry roast the fenugreek seeds in a pan until fragrant. Allow to cool, then grind into a fine powder using a mortar and pestle or spice grinder.
Combine Ingredients
- In a bowl, combine the cooled garlic, turmeric powder, red chili powder, salt, and fenugreek powder. Add the white vinegar and mix thoroughly.
Temper the Oil
- Heat mustard oil in a small pan. Once hot, add the mustard seeds and asafoetida. The mustard seeds will start to splutter. Immediately remove from heat.
Finish and Store
- Pour the hot, tempered oil over the garlic mixture. Do not stir immediately. Let it sit for at least 30 minutes to allow the flavors to meld. After 30 minutes, gently stir the pickle and store in an airtight glass jar. Your garlic pickle is ready to enjoy!
