Ingredients
 

Potatoes & Aromatics

  • 2 large Potatoes russet or yukon gold potatoes recommended; cut into 1-inch thick wedges
  • 4 tbsp Vegetable Oil
  • 2 Scallions white and green parts separated
  • 2 clove Garlic minced
  • 1 inch Ginger minced
  • 1/2 Onion red, thinly sliced

Spices & Seasoning

  • 1.5 tsp Salt or to taste
  • 1 bunch Coriander also known as coriander; chopped
  • 1 tsp Chili Powder adjust to your spice preference, red
  • 1 tsp Cumin Powder adjust to your spice preference

Instructions
 

Prepare the Potatoes

  • Cut potatoes into 1-inch thick wedges. Pat them dry with paper towels to ensure extra crispiness.

Fry the Potatoes

  • Heat 2 tablespoons of oil in a large wok or skillet over medium-high heat. Add the potatoes and fry for about 8-10 minutes, until golden brown and crispy, turning occasionally.

Sauté Aromatics

  • Transfer the crispy potatoes to a plate. Add the remaining 2 tablespoons of oil to the wok. Add the minced garlic and ginger and sauté for about 30 seconds until fragrant. Add the sliced red onion and sauté for 2-3 minutes until softened.

Combine and Season

  • Return the crispy potatoes to the wok. Add the red chili powder, cumin powder, and salt. Toss to combine. Stir in the chopped cilantro and the white parts of the scallions.

Garnish and Serve

  • Garnish with the green parts of the scallions and serve immediately. Enjoy!
