Ingredients
For the Chipotle Turkey Breast
- 2 kg Turkey Breast
- 1 cup Olive Oil
- 1/2 cup Butter melted
- 2 tbsp Chipotle Powder finely chopped, or 1-2 chipotle peppers in adobo sauce
- 3 tbsp Garlic Powder
- 1 tsp Pepper black, or to taste
- 1 tsp Salt or to taste
- 5 clove Garlic
- 4 Chili Peppers red, whole
For the Roasted Fingerling Potatoes
- 1 kg Fingerling Potatoes washed and patted dry
- 100 ml Olive Oil
- 3 tbsp Rosemary chopped, fresh
- 1 tbsp Garlic Powder
- 2 tsp Salt or to taste
- 2 tbsp Pepper black, ground
- 1 cup Chicken Stock for gravy, optional
- 1 tbsp Corn Flour for thickening gravy, optional
Instructions
Prepare the Turkey Breast
- Marinate the turkey breast in a mixture of olive oil, chipotle powder (or chopped chipotle peppers), garlic powder, salt, and pepper.
- Insert a few whole red chili peppers into the turkey cavity. Rub the marinade all over the turkey breast, including inside the cavity. Brush the skin with melted butter.
- Place the turkey breast in a roasting pan. Add the remaining garlic cloves and a tablespoon of butter inside the cavity.
Roast the Turkey
- Preheat oven to 400°F (200°C). Roast the turkey for approximately 30 minutes. Baste with the remaining melted butter 2-3 times during roasting. The skin should be nicely browned.
- Remove the turkey from the oven and cover loosely with aluminum foil. Let it rest for 20 minutes.
- Skim off excess fat from the pan juices. Transfer the pan juices to a gravy boat.
- Carve the turkey and serve with the pan juices. Remember to remove the chili peppers and garlic cloves from the cavity before carving.
Make the Gravy (Optional)
- If you want a thicker gravy, add chicken stock to the pan juices. Create a cornstarch slurry by whisking together cornstarch with a little cold water. Stir the slurry into the juices and simmer until thickened.
Prepare the Fingerling Potatoes
- Pre-boil the fingerling potatoes for 10-15 minutes in boiling water until slightly tender.
- Toss the potatoes with olive oil, rosemary, garlic powder, salt, and pepper. Let them sit for 10 minutes to allow the flavors to absorb.
- In a pan over medium-low heat, slow roast the potatoes for 20-25 minutes, flipping occasionally, until they are browned evenly and cooked through.

- To ensure the turkey is cooked through, use a meat thermometer to check the internal temperature. It should reach 165°F (74°C) in the thickest part of the breast.
