  • Gradually add the granulated sugar to the egg whites while whisking constantly until stiff, glossy peaks form. This creates a meringue base for the macarons.
  • Gently fold the dry ingredients into the meringue in three additions. Be careful not to overmix, as this can deflate the batter.
  • Add the vanilla extract and food coloring, if using, and fold until just combined.
  • Transfer the batter to a piping bag fitted with a round tip. Pipe 1-inch circles onto a baking sheet lined with parchment paper or a silicone mat.
  • Tap the baking sheet firmly on the counter a few times to release any air bubbles. Let the macarons rest at room temperature for 30-60 minutes, or until a skin forms on top. This helps create the characteristic macaron 'feet'.
