Ingredients
Chicken & Marinade
- 250 gm Chicken boneless, cut into 1-inch pieces
- 1/2 cup Yogurt beaten
- 1 tbsp Pickling Spice Blend and coriander powder (adjust to taste). you can use store bought mix., chili powder, garam masala, or 1 tsp each of turmeric
- 1 tsp Salt or to taste
Aromatics & Spices
- 1 Large Onion finely chopped
- 1 tbsp Ginger-Garlic Paste
- 1/4 tsp Chili Powder adjust to taste, red
- 1/2 tsp Turmeric Powder haldi
- 1/4 tsp Nigella Seeds kalonji
- 1/4 tsp Cumin Seeds jeera
- 1/4 tsp Fennel Seeds saunf
- 1/4 tsp Fenugreek Seeds methi dana
Other Ingredients
- 2 tbsp Vegetable Oil
- Coriander chopped, for garnish
Instructions
Sauté Aromatics
- Heat oil in a pan or wok over medium heat. Add the chopped onion and sauté until golden brown. Add the ginger-garlic paste and cook for 1 minute until fragrant.
Bloom Spices
- Add the cumin seeds, fennel seeds, nigella seeds, and fenugreek seeds. Sauté for 30 seconds until fragrant, being careful not to burn them.
Cook Chicken
- Add the marinated chicken (or unmarinated chicken and spices) to the pan. Stir well to coat the chicken with the spices. Cook for 10-15 minutes, stirring occasionally, until the chicken is lightly browned and the oil begins to separate.
Simmer in Yogurt
- Add the beaten yogurt and 1/2 cup of water. Mix well to combine. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened to your desired consistency.
Garnish & Serve
- Remove from heat. Garnish with chopped fresh coriander leaves. Serve hot with naan, roti, or jeera rice. Enjoy!
