Ingredients
 

For the Wheat Milk

  • 1 Wheat Berries large sized, whole grains; soak in plenty of water overnight (at least 8 hours)

For the Halwa

  • 2 cup Sugar granulated
  • 1/2 cup Water for the sugar syrup
  • 1 tsp Cardamom Powder ground green cardamom; you can also add a pinch of nutmeg
  • 1/2 tsp Saffron Threads a pinch; optional, for color and flavor
  • 1/2 cup Nuts chopped almonds, cashews, mixed, pistachios; or your favorite variety
  • 1.5 cup Ghee desi ghee

Prepare the Wheat Milk

  • Grind the soaked wheat berries into a fine paste using a blender or food processor. Strain the paste through a fine-mesh sieve or cheesecloth to extract the milk. Let the milk rest undisturbed for at least 2-3 hours to allow the sediment to settle at the bottom.

Make the Sugar Syrup

  • In a heavy-bottomed pan, combine the sugar and water. Cook over medium heat, stirring occasionally, until a single-thread consistency is reached (about 230-240°F). This will take about 10-15 minutes.

Combine and Cook the Halwa

  • Carefully pour the extracted wheat milk into the sugar syrup. Stir continuously as the mixture thickens. Once it becomes difficult to stir, add the ghee in small amounts, while continuing to stir vigorously. Continue this process for about 40-45 minutes, stirring consistently to prevent burning.

Add Flavorings and Nuts

  • In the middle of the cooking process, stir in the saffron, cardamom powder, and chopped nuts. Continue stirring until well combined.

Check for Doneness

  • The halwa is done when it starts to release ghee from the sides and becomes a non-sticky, slightly firm consistency. It should resemble a thick, creamy jelly.

Set and Serve

  • Lightly grease a plate or tray with ghee. Pour the halwa onto the prepared surface. Spread it evenly to a thickness of about 1.5 inches. Sprinkle with extra nuts, if desired, and allow it to cool completely before slicing.

  • Once cooled, cut the halwa into squares or desired shapes and serve.
