Ingredients
For the Dough
- 1 cup Whole Wheat Flour atta, whole
- 1/4 tsp Salt or to taste
- 5 tsp Oil vegetable or refined
- 1/2 cup Water approximately, more as needed for kneading
For the Sprouted Matki Filling
- 1/2 cup Sprouted Moth Beans matki, also known as sprouted matki moth
- 1 cup Water
- 2 tsp Oil vegetable or refined
- 1/4 tsp Mustard Seeds rai
- 1/4 tsp Chili Powder adjust to taste, red
- 1/4 tsp Turmeric Powder haldi
- 1/4 tsp Salt or to taste
- 1/2 medium Onion finely chopped
- 1/2 medium Tomato finely chopped
- 2 tbsp Coriander freshly chopped
- 1/2 cup Chickpea Noodle
- 1/4 cup Tamarind Chutney
- 1/4 cup Chutney green, mint or cilantro chutney
- 2 cup Oil for deep frying
Instructions
Prepare the Dough
- Mix whole wheat flour, salt, and oil. Knead into a stiff dough using warm water. Let it rest, covered, for 30 minutes.
Prepare the Sprouted Matki Filling
- Heat oil in a pan. Add mustard seeds and let them splutter. Add sprouted matki, red chili powder, turmeric powder, salt, and water. Cook in a covered pan until soft and slightly mushy.
Make the Puris
- Knead the dough again for 2 minutes. Roll into small, thin circles (4 inches in diameter). Use a fork to prick holes all over to prevent puffing. Let them dry on a clean cloth for 4 hours.
Fry the Puris
- Heat oil for deep frying. Gently fry the puris until golden brown on both sides, pressing slightly with a spoon to ensure they remain flat. Fry on medium heat, flipping with tongs.
Assemble the Sev Puri
- Spread the sprouted matki mixture evenly on each puri. Top with tamarind chutney, green chutney, chopped onions, tomatoes, and coriander. Sprinkle sev generously.
Serve
