  • In a dry grinder, combine the grated coconut, cumin seeds, dried red chilies, shallots, and garlic cloves. Grind to a coarse paste. Set aside.

  • Soak the toor dal in water for 30 minutes. This helps it cook evenly with the rice. Rinse the rice thoroughly. In a pressure cooker, combine the soaked toor dal, rinsed rice, water, tamarind juice, drumstick leaves, spice paste, salt, and turmeric powder.

  • Close the pressure cooker lid and cook for 4 whistles. Alternatively, you can cook the mixture in a rice cooker with one cup of extra water. Allow the pressure to release naturally.
  • Heat the desi ghee in a small pan over medium heat. Add the mustard seeds and chana dal. Sauté until the mustard seeds splutter and the chana dal turns golden brown. This tempering adds a wonderful aroma and flavor to the dish. Gently mix the tempering into the cooked toor dal rice.
