Ingredients
Dry Ingredients
- 1 cup Wheat Rava also known as fine wheat semolina, sooji
- 1/4 tsp Turmeric Powder
- 1.5 tsp Salt adjust to taste
Spices and Aromatics
- 1 tsp Cooking Oil vegetable oil or olive oil
- 1/2 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds jeera
- 2 sprigs Curry Leaves
- 1 tbsp Ginger finely chopped
- 2 Chilies sliced, green
Vegetables
- 1 Onion finely chopped
- 1 cup Vegetables finely chopped carrots, and peas, beans, bell peppers, mixed
- 1/2 cup Corn Kernels fresh or frozen
- 1/2 cup Sprouts mung bean or mixed sprouts
Instructions
Sauté Aromatics
- Heat oil in a pressure cooker. Add mustard seeds and cumin seeds. Once they splutter, add curry leaves, ginger, and green chilies. Sauté for 30 seconds.
Add Vegetables and Spices
- Add the chopped onion and sauté for another minute. Add the mixed vegetables, corn kernels, and sprouts. Stir well and cook for 2-3 minutes.
Simmer and Add Rava
- Add turmeric powder and salt. Mix thoroughly. Add 2.25 cups of water, stir well, and bring to a boil.
Pressure Cook
- Add the wheat rava, stirring constantly to prevent lumps. Cook on high pressure for 3 whistles. Reduce the heat and let the pressure release naturally.
Garnish and Serve
- Once the pressure is released, fluff the upma with a fork. Garnish with fresh coriander leaves. Serve hot with your choice of chutney or sambar. Optional: Squeeze a little lemon juice before serving.
