  • 250 gm Okra also known as ladies fingers
  • 1/2 cup Coriander dhania, chopped

Preparation

  • Wash and thoroughly dry the okra. Cut the okra into 1-inch pieces. Finely chop the coriander leaves.

Sautéing the Okra

  • Heat the vegetable oil in a pan or wok over medium heat. Add the panch phoron and let it splutter for a few seconds.
  • Add the okra pieces to the pan and sauté for 2-3 minutes, stirring occasionally, until slightly softened.

Simmering with Yogurt and Spices

  • Stir in the turmeric powder, black pepper powder, and salt. Add the yogurt and mix well. Reduce the heat to low, cover the pan, and simmer for 5-7 minutes, or until the okra is tender and the sauce has thickened slightly.

Finishing and Serving

  • Stir in the chopped coriander leaves. Remove from heat and serve hot with rice or roti.
