  • Wash the okra thoroughly and pat it dry. This removes any dirt and debris.

  • Heat the mustard oil in a pan over medium heat. Add the cumin seeds and let them sizzle. This releases their aroma and infuses the oil with flavor.

  • Add the curry leaves, dried red chili, and asafoetida to the pan. Sauté for a few seconds until fragrant.
  • Add the chopped okra, turmeric powder, salt, and moringa masala to the pan. Stir well to coat the okra with the spices.
  • Reduce the heat to low, cover the pan, and let the okra simmer for 5-7 minutes, or until tender-crisp. Covering the pan helps the okra cook evenly and retain moisture.
  • Remove the lid and stir in the slit green chilies. Increase the heat to medium-high and sauté for another 2-3 minutes to allow any excess moisture to evaporate and the okra to crisp up.
