Ingredients
For the Spiced Potato Filling
- 1 tablespoon Mustard Seeds
- 1/2 teaspoon Asafoetida hing
- 1 tablespoon Gram Dalia roasted
- 2 Chili Peppers finely chopped, green
- 7 leaves Curry Leaves
- 2 Onion finely chopped
- 4 Potato boiled and mashed
- 1.5 tsp Salt or to taste
- 1 tbsp Oil
For the Idli Sandwich
- 500 grams Idli Batter
- 2-3 tbsp Tomato Chutney or chutney of your choice
Instructions
Prepare the Spiced Potato Filling
- Heat oil in a pan. Add mustard seeds and let them splutter. Add asafoetida, dalia, green chilies, and curry leaves. Sauté for a minute until fragrant.
- Add chopped onions and a pinch of salt. Sauté until onions are translucent and slightly pink.
- Add the boiled and mashed potatoes. Mix well and season with salt to taste. Set aside.
Prepare the Idlis
- Steam the idli batter according to package instructions to create thick and spongy idlis.
- Let the idlis cool slightly, then unmold them and carefully cut each idli into two equal layers using a sharp knife or pizza cutter.
Assemble the Sandwich
- Spread tomato chutney on one layer of idli.
- Evenly spread the spiced potato filling onto the other idli layer.
- Top with the chutney-spread idli layer to create a sandwich.
Grill and Serve
- Place the assembled sandwich in a griller or toaster for about 5 minutes, or until lightly golden brown and heated through, ensuring even toasting on both sides.
- Cut the sandwich into triangles and serve hot with tomato chutney.
