For the Uttapam Batter

  • 2 cup Semolina fine semolina is recommended, suji
  • 1 cup Yogurt curd, plain yogurt, at room temperature
  • 1/2 cup Water
  • 1 tsp Salt or to taste
  • 2 Chilies finely chopped, green

Prepare the Uttapam Batter

  • In a large bowl, combine the semolina, yogurt, water, salt, and green chilies. Whisk until a smooth, lump-free batter forms. Let the batter rest for 15 minutes.

Cook the Uttapams

  • Heat a non-stick tawa (griddle) over medium heat. Lightly grease with ghee.
  • Pour a small amount of batter onto the hot tawa, spreading it into a thin circle.
  • Sprinkle the chopped tomato, onion, carrot, and capsicum evenly over the top. Gently press down on the vegetables.
  • Cook until the edges start to lift and the bottom is golden brown. Flip and cook the other side until lightly browned.
  • Repeat with the remaining batter to make several uttapams.

Assemble the Uttapam Sandwiches

  • Spread Szechuan sauce on one uttapam, green chutney on another, and tomato ketchup on a third.
  • Arrange the sliced onions and tomatoes on top of the sauced uttapams.
  • Top with another uttapam to create a sandwich.
