Ingredients
For the Dosa
- 1 cup Dosa Batter freshly ground, preferably without preservatives or soda
For the Mushroom Filling
- 1 cup Button Mushrooms sliced
- 1/2 cup Bell Peppers sliced
- 1 Onion sliced
- 1 tsp Garlic minced
- 2 tbsp Cooking Oil divided
- 1 tsp Cumin Seeds roasted and ground
- 1 tbsp Pepper black, ground
- 1 1/2 tsp Salt or to taste
For Assembly
- 1 cup Cheddar Cheese shredded
Instructions
- In a pan, heat 1 tablespoon of oil. Add the minced garlic and sauté until fragrant.
- Add the sliced onions and sauté for a minute until they begin to soften.
- Add the sliced mushrooms and cook over high heat for 2 minutes, stirring occasionally, until they release their moisture and start to brown.
- Add the sliced bell peppers and cook for another minute until slightly softened. This quick cooking preserves their vibrant color and crisp texture.
- Stir in the ground cumin, ground black pepper, and salt. Mix well to combine. The mushroom filling is now ready.
- Lightly grease a large nonstick skillet or cast-iron pan with the remaining oil and heat over medium heat. Pour a scoop of dosa batter onto the hot skillet and spread it in a circular motion to form a thin, even crepe.
- Cook for about 30 seconds until the edges start to curl and the surface appears set.
- Sprinkle shredded cheddar cheese over the dosa and cook for another minute until the cheese is melted and bubbly, and the dosa is golden brown.
- Transfer the cheesy dosa to a serving plate. Spread a portion of the mushroom filling evenly over the cheese.
- Make two more dosas without cheese, following the same cooking method as before. Place one plain dosa on top of the mushroom filling.
- Spread another layer of mushroom filling over the second plain dosa. Top with the third dosa to create a layered sandwich.
- Slice the layered dosa sandwich into two equal parts and serve immediately. Enjoy!
Recipe Notes
Good To Know
- For extra flavor, sauté the mushrooms, capsicum, and onions with a pinch of garam masala or chaat masala before stuffing them into the dosa, enhancing the fusion aspect of the dish.
- If you prefer a crispier sandwich, cook the dosa over medium-high heat and lightly press the filled dosa with a spatula after folding, allowing the cheese to melt and the dosa to develop a golden crust.
- To make this dish vegan, substitute the cheddar cheese with a plant-based cheese alternative and use a tablespoon of nutritional yeast to boost the savory, cheesy flavor.
- For easy packing, allow the dosa sandwiches to cool slightly before slicing and wrapping them in parchment paper—this helps prevent sogginess and makes them perfect for lunchboxes or on-the-go snacks.
- Serve with chips and salads.
Expert Tips
- Experiment with different fillings! Try adding cooked potatoes, paneer, or other vegetables for variety.
- For a spicier kick, add a few chopped green chilies to the filling or serve with a side of chutney.
- Make a large batch of dosa batter and store it in the refrigerator for a quick and easy weeknight meal.
Storage Instructions
- Store leftover dosa sandwiches in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or microwave before serving.
