  • In a pan, heat 1 tablespoon of oil. Add the minced garlic and sauté until fragrant.
  • Add the sliced onions and sauté for a minute until they begin to soften.
  • Add the sliced mushrooms and cook over high heat for 2 minutes, stirring occasionally, until they release their moisture and start to brown.
  • Add the sliced bell peppers and cook for another minute until slightly softened. This quick cooking preserves their vibrant color and crisp texture.
  • Stir in the ground cumin, ground black pepper, and salt. Mix well to combine. The mushroom filling is now ready.
  • Lightly grease a large nonstick skillet or cast-iron pan with the remaining oil and heat over medium heat. Pour a scoop of dosa batter onto the hot skillet and spread it in a circular motion to form a thin, even crepe.
  • Cook for about 30 seconds until the edges start to curl and the surface appears set.
