- Once cool enough to handle, peel and discard the charred skin from the eggplant. Roughly mash the eggplant flesh.
Prepare the Tomatoes
- Peel and mash the roasted tomatoes. Set aside.
Sauté Aromatics
- Heat ghee in a pan over medium heat. Add the minced garlic, green chilies, and whole red chilies. Sauté for about a minute until fragrant.
Combine and Simmer
- Add the mashed tomatoes and eggplant to the pan. Mix well and cook for 5-7 minutes over low heat, stirring occasionally, until the flavors meld.
Finish and Serve
- Stir in the chopped ginger, lemon juice, and salt. Remove from heat. Garnish with chopped coriander.
