Ingredients
 

Vegetables & Paneer

  • 200 gm Cottage Cheese indian cottage cheese, cubed
  • 1 large Bell Peppers any color, chopped into 1-inch pieces
  • 2 medium Tomatoes chopped into 1-inch pieces
  • 200 gm Mushrooms cremini or button mushrooms, quartered

Marinade

  • 1/2 cup Yogurt greek yogurt recommended
  • 1 tsp Pepper black, freshly crushed
  • 1.5 tsp Salt or to taste
  • 2 tsp Olive Oil

Prepare the Marinade

  • Combine yogurt, crushed black pepper, salt, and olive oil in a bowl. Add the cubed paneer, bell pepper, tomatoes, and mushrooms. Toss to coat evenly and marinate for at least 30 minutes.

Assemble the Skewers

  • Thread the marinated paneer and vegetables onto the soaked bamboo skewers.

Grill the Skewers

  • Preheat a grill or grill pan to medium-high heat. Lightly oil the grill grates. Grill the skewers for 2-3 minutes per side, or until the vegetables are tender and slightly charred.

Create the Smoky Effect

  • Place the charcoal briquette on a heat-safe dish and ignite it with a lighter or match (carefully!). Once glowing red, place the dish into a small, heat-safe bowl (to contain embers) and place the bowl in the center of a serving platter. Immediately drizzle 1-2 tbsp of butter over the hot coals, then cover the entire setup with an inverted bowl for approximately 1 minute to allow the smoke to infuse the skewers.

Serve

  • Remove the skewers and arrange them on the serving platter, ensuring to carefully avoid contact with the hot coals. Garnish with fresh cream and tomato sauce. Serve immediately.

  • For best results, use high-quality paneer. Look for firm, non-crumbly paneer.
  • Soaking the bamboo skewers prevents them from burning during grilling. Soak for at least 30 minutes before use.

  • Adjust the grilling time based on your grill's heat and the size of your vegetables. Ensure the vegetables are tender but still retain a slight bite.
