Ingredients
Vegetables & Paneer
- 200 gm Cottage Cheese indian cottage cheese, cubed
- 1 large Bell Peppers any color, chopped into 1-inch pieces
- 2 medium Tomatoes chopped into 1-inch pieces
- 200 gm Mushrooms cremini or button mushrooms, quartered
Marinade
Garnish & Serving
- 1/2 cup Cream fresh
- 1/4 cup Tomato Sauce
- 10 Bamboo Skewers soaked in water for at least 30 minutes
- 1-2 tbsp Butter for the smoking process
- 1 piece Charcoal Briquette for smoking
Instructions
Prepare the Marinade
- Combine yogurt, crushed black pepper, salt, and olive oil in a bowl. Add the cubed paneer, bell pepper, tomatoes, and mushrooms. Toss to coat evenly and marinate for at least 30 minutes.
Assemble the Skewers
- Thread the marinated paneer and vegetables onto the soaked bamboo skewers.
Grill the Skewers
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grill grates. Grill the skewers for 2-3 minutes per side, or until the vegetables are tender and slightly charred.
Create the Smoky Effect
- Place the charcoal briquette on a heat-safe dish and ignite it with a lighter or match (carefully!). Once glowing red, place the dish into a small, heat-safe bowl (to contain embers) and place the bowl in the center of a serving platter. Immediately drizzle 1-2 tbsp of butter over the hot coals, then cover the entire setup with an inverted bowl for approximately 1 minute to allow the smoke to infuse the skewers.
Serve
- Remove the skewers and arrange them on the serving platter, ensuring to carefully avoid contact with the hot coals. Garnish with fresh cream and tomato sauce. Serve immediately.
