Ingredients
For the Paneer Kebabs:
- 250 gm Cottage Cheese cut into 1-inch cubes or finger-length pieces, indian cottage cheese
- 20 gm Butter or 2 tbsp vegetable oil or ghee
- 10 gm Ginger-Garlic Paste
- 2 gm Turmeric Powder
- 1 gm Cardamom Powder
- 20 gm Hung Yogurt greek yogurt can be substituted
- 4 gm Salt kala namak; or use regular salt to taste, black
- 2 gm Chili Powder adjust to your spice preference, red
- 1 tbsp Coriander Powder
- 1/2 tsp Garam Masala
For the Mint Chutney:
- 4 Spring Onions medium-sized, finely chopped
- 10 Garlic Cloves finely chopped
- 1 cup Mint Leaves packed, fresh
- 1-2 Chilies finely chopped, adjust to taste, green
- 1 medium Tomato seedless, finely chopped
- 1 tbsp Lemon Juice
- 1/2 tsp Salt to taste
- 2 tbsp Water to adjust consistency
- 2 tbsp Vegetable Oil for grilling
Instructions
Marinate the Paneer
- Combine paneer, butter (or oil), ginger-garlic paste, turmeric powder, cardamom powder, hung yogurt, black salt, red chili powder, coriander powder, and garam masala in a bowl. Mix well to ensure the paneer is evenly coated. Marinate for at least 30 minutes, or preferably 1-2 hours in the refrigerator for enhanced flavor.
Prepare the Mint Chutney
- Combine spring onions, garlic, mint leaves, green chilies, tomato, lemon juice, salt, and water in a food processor or blender. Pulse until finely chopped but still slightly textured. Adjust seasoning to taste. If using a mortar and pestle, finely chop all ingredients before combining and grinding to a paste.
Assemble and Grill the Kebabs
- Thread the marinated paneer onto skewers. Heat vegetable oil in a grill pan or skillet over medium-high heat. Grill the kebabs for 2-3 minutes per side, or until golden brown and heated through.
Serve
- Remove kebabs from the grill pan and serve immediately with the mint chutney. Garnish with fresh coriander leaves, if desired.
