  • Combine paneer, butter (or oil), ginger-garlic paste, turmeric powder, cardamom powder, hung yogurt, black salt, red chili powder, coriander powder, and garam masala in a bowl. Mix well to ensure the paneer is evenly coated. Marinate for at least 30 minutes, or preferably 1-2 hours in the refrigerator for enhanced flavor.

Prepare the Mint Chutney

  • Combine spring onions, garlic, mint leaves, green chilies, tomato, lemon juice, salt, and water in a food processor or blender. Pulse until finely chopped but still slightly textured. Adjust seasoning to taste. If using a mortar and pestle, finely chop all ingredients before combining and grinding to a paste.

Assemble and Grill the Kebabs

  • Thread the marinated paneer onto skewers. Heat vegetable oil in a grill pan or skillet over medium-high heat. Grill the kebabs for 2-3 minutes per side, or until golden brown and heated through.
