- 2 tbsp All-Purpose Flour
- 1.5 tsp Salt or to taste
- 2 tsp Pepper black, freshly crushed
- 2 tsp Chaat Masala
- 1 tsp Fenugreek Leaves kasuri methi, dried
- 1 tbsp Mint Leaves finely chopped, fresh
- 1 tbsp Coriander finely chopped
- 1 tbsp Olive Oil
Skewer Ingredients
- 200 gm Cottage Cheese indian cheese, cubed
- 1 Tomato cubed, medium
- 1/2 Onion cubed
- 1/2 Cauliflower blanched and cubed
Serving
- Mint Chutney for serving
- 2 tbsp Butter for grilling
Instructions
Prepare the Marinade
- Combine hung curd, flour, salt, chaat masala, black pepper, dried fenugreek leaves, chopped mint and coriander, and olive oil in a bowl. Mix thoroughly.
Marinate the Ingredients
- Add the cubed paneer, tomato, onion, and blanched cauliflower to the marinade. Stir gently to coat everything evenly. Refrigerate for at least 30 minutes, or up to 1 hour, to allow the flavors to meld.
Assemble the Skewers
- Thread the marinated paneer and vegetables onto skewers. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.
Grill the Skewers
- Preheat your oven's broiler or grill pan. Arrange the skewers on a baking sheet lined with foil or on a grill pan. Grill for 10-12 minutes, turning occasionally, until the paneer is heated through and slightly browned and the vegetables are tender.
Finish and Serve
- Brush the skewers with butter or olive oil and sprinkle with extra chaat masala. Serve immediately with mint chutney. Enjoy!
Recipe Notes
Expert Tips for Sizzling Success
- For extra smoky flavor, you can grill the skewers on an outdoor grill instead of using the oven.
- Feel free to add other vegetables to your skewers, such as bell peppers, zucchini, or mushrooms.
- If you don't have hung curd, you can use regular yogurt, but strain it through cheesecloth for about 2 hours to remove excess liquid for the best results.
- Adjust the amount of spices to suit your preference. If you like a spicier barbeque, add a pinch of red chili powder to the marinade.
