Cooking the Sabzi

  • Heat oil in a pan on medium heat. Add cumin seeds and let them crackle.
  • Add sliced carrots and green peas. Mix well so the vegetables are lightly coated with oil.
  • Add turmeric powder and salt. Sprinkle 2–3 tablespoons of water, cover, and cook on low heat until the carrots are soft and peas are fully cooked.
  • Remove the lid and cook for 2–3 minutes until the sabzi looks dry with no excess moisture.
  • Add chopped coriander leaves, mix gently, and switch off the heat.
