Ingredients
Pasta & Vegetables
- 8 oz Quinoa Pasta a mix of red and white quinoa pasta is ideal, but either can be used.
- 100 gm Baby Spinach
- 7 Cherry Tomatoes halved
Seasoning & Aromatics
- 3 tsp Pepper black, freshly ground, to taste
- 1 tbsp Italian Herbs and thyme, basil, dried italian herb blend, or fresh herbs like oregano
- 2.5 clove Garlic finely minced
Instructions
Cook the Pasta
- Cook quinoa pasta according to package directions until al dente. Reserve about 1/2 cup of pasta cooking water before draining.
Sauté Vegetables
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 2 minutes until fragrant. Add halved cherry tomatoes and cook for another 2-3 minutes until slightly softened.
Combine & Finish
- Stir in baby spinach and cook until wilted, about 2-3 minutes. Add the cooked quinoa pasta, salt, and black pepper to the skillet. Toss to combine. If the mixture is too dry, add a little of the reserved pasta water until desired consistency is reached. Cook for 1-2 minutes more.
Serve
- Remove from heat and stir in the Italian herbs. Serve immediately and enjoy!
