Ingredients
- 2 cup Shrikhand 2 cup, shrikhand
- 1 cup Cottage Cheese paneer
- 1/2 cup Milkmaid
- 1 packet Digestive Biscuit
- 1 pinch Food Color green and red color
- 3 tsp Gelatin
- 2 tbsp Butter
- Vanilla Essence or essence rose and essence, saffron essence few drops
Instructions
Prepare the Crust
- Crush digestive biscuits into fine crumbs. Combine the crumbs with melted butter and mix well. Press the mixture firmly into the bottom of a springform pan or similar mold. Refrigerate for at least 10 minutes.
Prepare the Filling
- Bloom the gelatin by sprinkling it over cold water and letting it sit for 5 minutes to soften. In a mixer, combine the shrikhand, paneer, sweetened condensed milk, and vanilla extract until smooth and creamy. Gently heat the bloomed gelatin until just dissolved. Add the dissolved gelatin to the paneer mixture and stir well. Divide the mixture into two bowls, leaving one portion plain. Add a small amount of green food coloring to one portion and red food coloring to the other.
Assemble and Chill
- Pour the plain shrikhand paneer mixture over the chilled crust. Gently swirl in the green and red portions to create a marbled effect. Refrigerate for at least 4 hours, or preferably overnight, to allow the dessert to set completely.
Garnish and Serve
- Once set, carefully remove the sides of the springform pan. Garnish with fresh berries or chopped pistachios, if desired. Slice and serve chilled.
