Ingredients
 

For the Crepe Batter

  • 1 1/4 cup Rice dosa rice, soaked overnight
  • 1 tbsp Fenugreek Seeds methi dana
  • 1/2 cup Water or as needed to achieve a smooth batter consistency

Instructions
 

Prepare the Batter

  • Soak the dosa rice and fenugreek seeds in plenty of water overnight.
  • The next day, blend the soaked rice and fenugreek seeds into a smooth batter using a blender. Add water as needed to adjust the consistency.

Prepare the Dill Filling

  • In a separate bowl, combine the finely chopped dill leaves, grated coconut, and grated jaggery.
  • Blend this mixture until it forms a smooth paste.
  • Season with salt to taste.

Combine and Cook

  • Gently mix the dill filling into the rice batter. Add a little more water if necessary to achieve a pourable consistency.
  • Heat a non-stick pan or griddle over medium heat.
  • Lightly grease the pan with oil.
  • Pour a ladleful of batter onto the hot pan, spreading it into a thin, round crepe.

Cook the Crepes

  • Cook for 1-2 minutes per side, or until lightly golden brown and cooked through. You may cover the pan for the first minute to help it cook evenly.
  • Flip carefully when the edges begin to lift from the pan.
