Ingredients
For the Dough
- 1 cup All-Purpose Flour
- 1.5 tsp Salt or to taste
- 1/2 cup Water warm
- 1 tbsp Oil vegetable or canola
For the Schezwan Filling
- 1 Large Onion finely chopped
- 2 Carrots finely chopped
- 1 Bell Peppers capsicum, finely chopped
- 1/2 Cabbage finely chopped, green
- 1 tbsp Vegetable Oil
- 1 tbsp Schezwan Sauce
- 1/2 tsp Pepper black, freshly ground
- 1/2 tsp Ginger-Garlic Paste for extra flavour, optional
- 1/4 tsp Chili Flakes or to taste, red
Instructions
Prepare the Dough
- Combine flour and salt in a bowl. Gradually add warm water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Add 1 tbsp oil to the dough and knead for another minute. Cover with a damp cloth and let rest for at least 15 minutes.
Make the Schezwan Filling
- Heat oil in a pan or wok over medium heat. Add the chopped onions and sauté until softened. Add carrots, bell pepper, and cabbage. Stir-fry until the vegetables are tender-crisp. Add ginger-garlic paste (if using) and stir for 30 seconds. Stir in Schezwan sauce, black pepper, and red chili flakes. Mix well. Cook for another minute, then remove from heat and let cool.
Assemble and Cook the Paratha
- Divide the dough into small, equal-sized balls. Roll each ball into a thin circle using a rolling pin. Place a spoonful of the Schezwan filling in the center. Fold the dough over the filling, sealing the edges tightly. Gently roll it again into a slightly thicker circle. Heat a griddle or flat pan over medium heat. Cook the paratha on both sides until golden brown and slightly crispy. Serve hot.
Recipe Notes
Expert Tips for Perfect Schezwan Paratha
- For extra flavor, marinate the vegetables in a little soy sauce and ginger-garlic paste before stir-frying.
- If the dough is too sticky, add a little more flour. If it's too dry, add a teaspoon of water at a time.
- Don't overcrowd the pan when cooking the paratha; cook in batches to ensure even browning.
- Serve the Schezwan Paratha hot with your favorite chutney or yogurt for a complete meal.
