Prepare the Dough

  • In a large bowl, combine whole wheat flour and salt. Gradually add water, mixing until a stiff, smooth dough forms. Knead well for 5-7 minutes. Add 2 tablespoons of oil and knead for another 2 minutes. Cover and let the dough rest for at least 30 minutes.

Prepare the Vegetable Filling

  • Dice the potatoes and carrots into small, even pieces. Finely chop the onions, green beans, and green chilies. In a pressure cooker, combine all the chopped vegetables, green peas, salt, and turmeric powder. Add a little water (about 1/4 cup). Pressure cook for 3-4 whistles or until the vegetables are tender.

Mash and Sauté the Vegetables

  • Once the pressure is released, carefully open the cooker and mash the vegetables using a potato masher. If there's excess water, drain it before mashing. Heat 2 tablespoons of oil in a pan. Add the chopped onions and sauté until softened. Add the mashed vegetables, garam masala, and red chili powder. Mix well and cook for another 2-3 minutes. Stir in the chopped coriander leaves and remove from heat.

Assemble and Cook the Parathas

  • Take a small portion of the dough (about the size of a lemon). Roll it into a 3-inch circle. Place a spoonful of the vegetable filling in the center. Bring the edges together to seal the filling inside. Gently roll out the stuffed dough into a 5-inch circle.

Cook on the Tawa

  • Heat a non-stick tawa (griddle) over medium heat. Place the rolled paratha on the hot tawa. Cook for about 1-2 minutes per side, or until golden brown spots appear. Apply a little oil or ghee to both sides while cooking for added flavor and crispness. Repeat with the remaining dough.

Serve

  • Serve the Vegetable Parathas hot with yogurt, chutney, or ketchup.
