Instructions

Prepare the Crust

  • Combine flour, baking powder, melted butter, and pureed spinach in a bowl. Add water gradually until a soft dough forms. Set aside.

Sauté the Vegetables

  • Melt butter in a pan. Add finely chopped carrots and cabbage. Sauté until slightly softened. Stir in tomato puree, salt, pepper, lemon juice, and mixed herbs. Cook until the vegetables are tender-crisp.

Assemble and Bake the Tart

  • Preheat oven to 170°C (340°F). Grease a tart pan. Roll out the dough and press it into the pan, pricking the base with a fork. Bake for 10 minutes.

Layer the Filling

  • Remove the tart shell from the oven. Spread mashed potatoes evenly over the base. Season with salt and pepper. Add the cooked vegetables. Top with mozzarella cheese.

Finish and Bake

  • Spread the raw eggs over the cheese. Arrange diced red bell pepper and spinach dough strips on top. Bake for another 10 minutes, or until the eggs are set and the cheese is melted and bubbly. Let cool slightly before serving.
