Ingredients
 

Vegetables

  • 2 medium Potatoes boiled
  • 1 cup Cabbage finely chopped
  • 1/2 medium Onion finely chopped
  • 1 cup Tomatoes diced
  • 1/2 cup Corn canned or frozen, drained

Dairy & Spices

  • 1/2 cup Yogurt plain greek yogurt or curd recommended
  • 1 tsp Oregano dried oregano flakes
  • 1/2 tsp Salt or to taste
  • 1 tbsp Butter

Bread

  • 6 slices Bread your favorite bread; whole wheat or multigrain recommended

Instructions
 

Prepare the Potatoes

  • Boil 2 medium potatoes until tender (about 8-10 minutes). Drain and mash lightly with a fork.

Prepare the Bread

  • Lightly butter 6 slices of bread. If using large slices, consider cutting them in half diagonally or into smaller rounds. Toast lightly in a pan over medium heat for 1-2 minutes per side, or until lightly browned.

Mix the Filling

  • In a medium bowl, combine the mashed potatoes, chopped cabbage, onion, tomatoes, corn, yogurt, oregano, and salt. Mix well to combine.
