Ingredients

- 1/2 cup Semolina suji
- 1 cup Rolled Oats
Aromatics and Spices
- 1 Onion finely chopped
- 1-2 Chilies finely chopped, green
- 1 inch Ginger grated
- 10-12 Curry Leaves
- 1/2 tsp Mustard Seeds
- 1/4 tsp Asafoetida hing
Leavening and Flavoring
- 1 tsp Eno Fruit Salt
- 1/2 tsp Salt or to taste
- 2 tbsp Oil for cooking
Instructions
- In a large bowl, combine the semolina, rolled oats, yogurt, water, and salt. Mix well to form a thick batter.
- Cover the bowl and let the batter rest for 15-20 minutes. This allows the oats and semolina to absorb the liquid and soften, resulting in a lighter, fluffier texture.
- Heat the oil in a small pan over medium heat. Add the mustard seeds and let them splutter. This adds a nutty flavor and aroma to the dish.
- Add the asafoetida, curry leaves, chopped onions, green chilies, and grated ginger to the pan. Sauté for a few minutes until the onions become translucent and fragrant.
- Add the sautéed mixture to the batter. Just before cooking, add the Eno fruit salt to the batter and mix gently. The Eno fruit salt acts as a leavening agent, creating air pockets and making the appes light and airy.
- Heat an appe pan over medium heat. Lightly grease each cavity with oil. This prevents the appes from sticking and helps them achieve a crispy exterior.
- Pour a spoonful of batter into each cavity of the appe pan. Cook covered for 6-8 minutes, or until the bottoms are golden brown and crispy.
- Carefully flip each appe and cook for another 6-8 minutes, or until the other side is also golden brown and cooked through.
- Remove the appes from the pan and serve them hot with your favorite spicy chutney or dip.
