Ingredients
Dry Ingredients
- ¾ cup Breadcrumb fresh
- ¼ cup Semolina suji
Wet Ingredients
- ½ cup Yogurt
Vegetables and Spices
Other
- ¾ cup Water approximately, as needed
- ⅛ tsp Baking Soda
- 2 Tbsp Oil for frying
Instructions
- In a large bowl, combine the bread crumbs, semolina, and yogurt. Mix well to form a thick batter.
- Add the chopped onion, carrot, green chili, and cilantro to the batter. Mix thoroughly.
- Gradually add water to the batter, mixing until you achieve a thick, pourable consistency. The batter should be thick enough to coat the back of a spoon.
- Set the batter aside for 10-15 minutes to allow the semolina to absorb the moisture and create a lighter texture.
- Preheat an appe pan over medium heat. Lightly brush each mold with oil. This prevents sticking and ensures even browning.
- Just before cooking, add the baking soda to the batter and gently mix. The baking soda will create air bubbles, resulting in light and airy appe.
- Carefully fill each mold of the preheated appe pan with the batter. Cover the pan and cook for 3-4 minutes over low-medium heat.
- Once the appe are golden brown on one side, flip them over and cook until the other side is also golden brown and crispy.
- Remove the cooked appe from the pan and serve hot. Enjoy!
Recipe Notes
Good To Know
- For a crispier exterior, let the batter rest for 10-15 minutes before cooking. This allows the semolina to absorb moisture for better texture.
- Enhance the flavor by adding a tempering of mustard seeds, curry leaves, and a pinch of asafoetida to the batter before making the appe.
- For a vegan version, substitute yogurt with plant-based yogurt or add a splash of lemon juice to water for the tang, and ensure the bread used is dairy-free.
Expert Tips
- Don't overcrowd the appe pan; this will lower the temperature and result in soggy appe. Cook in batches for best results.
- For even cooking, ensure the appe pan is preheated properly before adding the batter.
- Get creative with the dipping sauces! Try chutneys, yogurt dips, or even a spicy peanut sauce.
Storage Instructions
- Leftover appe can be cooled and refrigerated in an airtight container for up to 2 days.
- Reheat in a pan or air fryer to restore their crispness before serving.
