Ingredients
For the Egg Mixture
- 4 Large Eggs
- 2 tbsp Milk
- 1 tbsp Chia Seeds
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- Salt to taste
- 1 tbsp Pepper black, freshly ground
For the Bake
- 5 tbsp Parmesan Cheese grated
- 6 slices Bread crusts removed, cut into small pieces
- 2 tsp Butter flavored butter, or unsalted butter with added herbs
Instructions
Prepare the Egg Mixture
- Break eggs into a bowl. Add milk, chia seeds, salt, and pepper. Whisk well with a fork. Set aside for 15 minutes to allow the chia seeds to absorb the liquid.
Prepare the Bread
- Remove the crusts from the bread slices and cut them into small, bite-sized pieces.
Assemble and Bake
- Lightly grease a small oven-safe dish (approximately 6-inch square or similar size) with butter. Arrange the bread pieces evenly in the bottom of the dish.
- Pour the egg mixture over the bread, ensuring it's evenly distributed.
- Sprinkle grated Parmesan cheese over the top.
- Microwave on high for 2-3 minutes, or until the eggs are fully cooked and the cheese is melted and slightly browned. Alternatively, bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until set.
Serve
- Remove from the microwave or oven and let it cool slightly before serving. Serve warm.
