Ingredients
 

Vegetables

  • 1/4 cup Onion finely chopped
  • 1 Chili finely chopped (adjust to taste), green
  • 1/2 cup Tomato finely chopped
  • 1/2 cup Carrot finely chopped
  • 2 tbsp Spring Onion finely chopped

Eggs & Dairy

  • 2 Eggs
  • 1 slice Cheese cheddar or your favorite type

Bread & Seasoning

Cooking Oil & Garnish

  • 1 tbsp Oil vegetable or your preferred type
  • 2-5 tsp Tomato Ketchup for serving

Instructions
 

Prepare the Vegetable Filling

  • Finely chop the onion, green chili, tomato, carrot, and spring onions.

Whisk the Eggs

  • In a bowl, crack the two eggs. Add salt, pepper, and the chopped vegetables. Whisk everything together thoroughly until well combined.

Cook the Omelette

  • Heat the oil in a non-stick frying pan over medium heat. Pour half of the egg mixture into the pan and spread it evenly to form a thin layer.

Layer the Bread

  • Gently place the two slices of bread on top of the egg mixture in the pan.

Add Remaining Egg Mixture

  • Pour the remaining egg mixture over the bread slices, spreading it evenly to coat the bread.

Cook and Flip

  • Cook for 3-5 minutes, or until the bottom is golden brown and the eggs are set. Carefully flip the omelette and cook for another 3-5 minutes on the other side.

Add Cheese and Fold

  • Place a slice of cheese on top of the cooked omelette. Carefully fold the omelette in half, using a spatula to help.

Serve

  • Remove the omelette from the pan. Cut into desired shapes (triangles or squares work well) and serve immediately. Garnish with ketchup or your preferred chutney.
