Ingredients
Tortilla Cups
- 3-4 Chapati leftover, or as needed
Filling
- 1 cup Soy Chunks and soaked in water, ground, minced
- 2 Tbsp Onion finely chopped
- 1 tsp Garlic minced
- 3 Tbsp Corn sweet
- 1 tsp Oregano dried
- 1 tsp Salt or to taste
- 1/4 cup Tomato Ketchup or puree
Topping
- 1/2 cup Cheddar Cheese shredded
- 2 Tbsp Cream Cheese or hung curd
Instructions
- Preheat oven to 350°F (175°C). Gently press each chapati into a small oven-safe bowl or ramekin, creating a cup shape.
- Bake the chapati cups for 10 minutes, or until lightly golden and crisp. This helps them hold their shape.
- While the tortilla cups bake, prepare the filling. In a skillet over medium heat, sauté the chopped onion and minced garlic until softened and fragrant.
- Add the ground, minced, and soaked soy chunks to the skillet. Cook until heated through, breaking it up with a spoon.
- Stir in the dried oregano, salt, tomato ketchup (or puree), and sweet corn. Cook for a few minutes, allowing the flavors to meld.
- Remove the baked chapati cups from the oven. Spread a thin layer of cream cheese or hung curd inside each cup.
- Fill each tortilla cup with the savory soy mixture.
- Top each filled cup with shredded cheddar cheese.
- Return the cups to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.

Expert Tips
- For a richer flavor, toast the nuts before adding them to the recipe. This enhances their natural oils and creates a more complex taste.
- Adjust the sweetness and spices to your liking. If you prefer a sweeter dish, add more sugar or honey. For a spicier kick, increase the amount of chili flakes or other spices.
- Don't be afraid to experiment with different ingredients. Substitute different types of nuts, seeds, or dried fruits to create your own unique variations.
Storage Instructions
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
