Ingredients
- 350 gm Penne Pasta
- 5 no Basil
- 1 tbsp Pine Nuts roasted
- ΒΌ tsp Garlic chopped
- 2 Cherry Tomatoes
- 1 no Asparagus
- 2 no Mutton sausage
- 2 tbsp Olive Oil
- 1-2 tsp Pepper or as per taste
- 1-2 tsp Salt or as per taste
- 1 tbsp Parmesan Cheese grated
- 1 cup Tomato julienne and italian parsley for garnish
Instructions
Prepare the Pesto
- Combine basil, pine nuts, garlic, Parmesan cheese, olive oil, salt, and pepper in a food processor. Blend until smooth. Add more olive oil if needed to reach desired consistency.
Cook the Pasta
- Cook penne pasta according to package directions. Drain and set aside.
SautΓ© the Sausage and Vegetables
- Heat a tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook, breaking them up with a spoon, until browned. Add the cherry tomatoes and asparagus and cook for another 5 minutes, until the vegetables are tender-crisp.
Combine and Serve
- Add the pesto to the skillet with the sausage and vegetables. Stir to combine. Add the cooked pasta and toss to coat evenly. Season with additional salt and pepper to taste.
