Ingredients
White Sauce
- 2 tbsp All-Purpose Flour also known as maida
- 2 tbsp Butter
- 1 1/2 cup Milk
- 1/2 tsp Salt for white sauce
- 1/4 tsp Pepper black, for white sauce
Casserole Ingredients
- 1 cup Mushrooms sliced, white
- 1/2 cup Corn frozen or canned, sweet, thawed
- 1 1/2 cup Sausages approximately 1 inch thick, diced
- 1/2 cup Pasta cooked, etc.), rigatoni, your choice (penne
- 200 gm Mozzarella Cheese grated, or other processed cheese
- 1/4 tsp Herbs dried, mixed
- 1/4 cup Broccoli
- 1/2 tsp Salt to season casserole
- 1/4 tsp Pepper black, to season casserole
- 1 Garlic Bread for serving
- 1 tbsp Olive Oil for sautéing
Instructions
Make the White Sauce
- Melt butter in a saucepan. Whisk in flour and cook for 1-2 minutes. Remove from heat and gradually whisk in milk until smooth. Return to heat, whisking constantly, until the sauce boils and thickens slightly. Season with salt and pepper.
Prepare the Vegetables and Sausage
- Pre-boil sweet corn until tender. Sauté sliced mushrooms in olive oil until they release their liquid and brown slightly. Steam broccoli florets until tender-crisp.
- Cook pasta according to package directions. Sauté diced sausages until lightly golden brown.
Assemble and Bake
- In a large bowl, combine cooked pasta, sautéed sausages, cooked corn, mushrooms, and broccoli. Season with salt, pepper, and mixed herbs. Gently stir in the white sauce until everything is well combined.
- Pour the mixture into a greased baking dish. Top with grated mozzarella cheese.
- Bake at 180°C (350°F) for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.
Serve
- Serve immediately with garlic bread.

Very nice recipe ! What would be the best substitute for sausage apart from paneer / tofu.. i prefer vegetarian food. Can i skip mushrooms in this recipe?
