  • Peel and grate 500g of ripe mangoes.

  • In a heavy-bottomed pan or kadhai, cook the grated mangoes for about 5 minutes over medium heat, stirring occasionally. This helps to soften them and release their natural juices.

  • Add the salt, black salt, black pepper, and cardamom powder. Stir well to combine. Gradually add the sugar and red chili powder, stirring continuously to prevent burning.

Simmer and Thicken

  • Continue cooking for another 10-15 minutes, stirring frequently, until the chutney begins to thicken and turn a rich, slightly brownish color. The cooking time may vary depending on the type of mango and the desired consistency.

Incorporate Dried Fruits

  • Stir in the chopped raisins, cashews, and almonds. Cook for another 5 minutes, allowing the dried fruits to soften and infuse their flavor into the chutney.

Cool and Serve

  • Remove from heat and let the chutney cool completely. This allows the flavors to meld and deepen. Serve chilled with bread, chapatti, or as a delicious accompaniment to snacks.
