Ingredients
For the Ravioli Dough
- 1 cup All-Purpose Flour
- 1 tbsp Ghee desi ghee can be substituted
- 1/4 tsp Sugar
- 1 tsp Rose Water
- 2 drops Food Coloring pink
- 1/2 tsp Rose Essence optional, for enhanced rose flavor
- 1/4 cup Milk add as needed to form dough
For the Mawa Filling
- 1/2 cup Mawa indian clotted cream
- 1/4 cup Sugar powdered
- 1/2 tsp Cardamom Powder also known as elaichi
- 1/4 cup Nuts almonds, chopped, or a mix, pistachios
For the Rabri Sauce
- 1 cup Milk whole milk recommended
- 2 tbsp Corn Flour cornstarch can be substituted
- 1/4 cup Sugar powdered
- 1/2 tsp Rose Water
For Serving
- 1/4 cup Nuts for garnish, chopped
- 1 tbsp Rose Syrup optional
- Rose Petals for garnish
- 1/2 tsp Cardamom Powder for garnish
Instructions
Prepare the Ravioli Dough
- Combine flour and sugar in a bowl. In a separate bowl, combine ghee, pink food coloring, and rose water. Add the ghee mixture to the flour mixture and incorporate rose essence (if using). Gradually add milk, mixing until a smooth, pliable dough forms. Cover and let rest for at least 30 minutes.
Make the Mawa Filling
- Grate the mawa and gently roast it in a pan over low heat until lightly browned and fragrant. Remove from heat and let cool completely. Stir in powdered sugar, cardamom powder, and chopped nuts.
Assemble the Ravioli
- Roll out the dough thinly. Use a cookie cutter (or knife) to cut out desired shapes. Place a small ball of mawa filling in the center of each dough circle. Top with another dough circle and firmly seal the edges, pressing to remove air bubbles. You can crimp the edges for a decorative finish.
Prepare the Rabri Sauce
- In a saucepan, heat the milk over medium heat. In a small bowl, whisk together corn flour and 2 tablespoons of cold milk until smooth. Slowly pour the corn flour mixture into the simmering milk, whisking constantly to prevent lumps. Continue to whisk until the sauce thickens slightly. Reduce heat to low and stir in powdered sugar and rose water. Do not overcook.
Cook the Ravioli
- Gently boil the ravioli in salted water until they float to the surface (about 3-4 minutes). Remove with a slotted spoon and drain well.
Serve
- Spread a layer of rabri sauce on serving plates. Arrange the cooked ravioli on top. Drizzle with rose syrup (if using), and garnish with rose petals, chopped nuts, and cardamom powder. Serve chilled for the best flavor and texture.
