Ingredients
Ravioli Dough
- 1.5 cup All-Purpose Flour
- 1 Large Egg
- 2 tbsp Olive Oil
- 1 pinch Baking Powder
- 1 tsp Salt
- 0.5 cup Water warm
Spinach and Ricotta Filling
- 0.5 bunch Spinach finely chopped
- 1 cup Ricotta Cheese
- 1 tbsp Garlic Paste
- 1 tsp Olive Oil
- 1 tsp Pepper black
- 1 tsp Salt
Creamy Pumpkin Sauce
- 0.5 kg Pumpkin diced
- 0.5 cup Butter
- 2 tbsp Ginger-Garlic Paste
- 1-2 tsp Salt to taste
- 1 tsp Sugar
- 1 tsp Pepper black, ground
- 1 pinch Cinnamon
- 2 tbsp Heavy Cream
- 0.5 cup Mozzarella Cheese shredded

- 0.5 cup Vegetables halved cherry tomatoes, mixed, sliced mushrooms, such as broccoli florets
- 5-6 Olives black
- 0.5 cup Mozzarella Cheese shredded
Instructions
Make the Ravioli Dough
- In a large bowl, combine the all-purpose flour, baking powder, and salt.
- Create a well in the center of the dry ingredients. Crack the egg into the well and add the olive oil.
- Begin incorporating the dry ingredients into the wet ingredients using a fork. Gradually add warm water, a tablespoon at a time, until a dough forms.
- Turn the dough out onto a lightly floured surface and knead for 10 minutes until smooth and elastic. Kneading develops the gluten, which gives the pasta its structure.
- Lightly coat the dough with olive oil, wrap it tightly in plastic wrap, and let it rest at room temperature for at least 2 hours. This allows the gluten to relax, making the dough easier to roll.
Prepare the Spinach and Ricotta Filling
- Heat olive oil in a pan over medium heat. Add the chopped spinach and sauté for 2 minutes until wilted. Drain any excess water.
- In the same pan, add a teaspoon of olive oil and the garlic paste. Sauté briefly until fragrant. Add the wilted spinach, ricotta cheese, salt, and pepper. Cook for another minute, stirring constantly, until well combined.
Assemble the Ravioli
- Divide the rested dough in half. On a lightly floured surface, roll out each half into very thin sheets using a rolling pin or pasta machine. The thinner the sheets, the better the ravioli will cook.
- Place small spoonfuls of the spinach and ricotta filling onto one pasta sheet, spacing them evenly apart. Brush the edges of the pasta around each mound of filling with water.
- Carefully lay the second pasta sheet over the filling. Press down firmly around each mound to seal, ensuring there are no air pockets. Crimp the edges of each ravioli with a fork to create a decorative edge and further seal the filling.
- Bring a large pot of salted water to a boil. Gently add the ravioli to the boiling water. They will sink to the bottom initially and float to the surface once cooked, about 4-5 minutes.
- Carefully remove the cooked ravioli with a slotted spoon and set aside.
Make the Creamy Pumpkin Sauce
- Steam the diced pumpkin with a little salt and water until tender. Drain and puree in a blender or food processor until smooth.
- In a saucepan, melt the butter over medium heat. Add the ginger-garlic paste and sauté until fragrant. Add the pumpkin puree, salt, sugar, black pepper, and cinnamon. Cook for 1 minute, stirring constantly.
- Stir in the heavy cream and shredded mozzarella cheese until melted and the sauce is smooth and creamy.
Bake and Serve
- Preheat oven to 250°F (120°C). In a large oven-safe skillet, heat olive oil over medium heat. Sauté the mixed vegetables until slightly tender. Add the black olives and toss to combine.
- Pour the creamy pumpkin sauce over the vegetables and mix well. Arrange the cooked ravioli over the sauce. Sprinkle with the remaining mozzarella cheese.
- Bake for 10 minutes, or until the cheese is melted and bubbly.
