Prepare the Pineapple

  • Cook chopped pineapple with sugar in a pan over medium heat for 5 minutes, until softened and some of the liquid has evaporated.

Reduce the Milk

  • In a separate deep pan, bring full cream milk to a simmer over low heat. Stir frequently to prevent burning and reduce the milk until it thickens significantly. This may take 20-30 minutes.

Combine and Cook

  • Add the cooked pineapple mixture, condensed milk, desiccated coconut, cardamom powder, and chopped pistachios to the thickened milk. Mix well and cook for another 2 minutes.

Chill and Serve

  • Remove from heat and let the rabri cool completely to room temperature. Refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to chill thoroughly. For serving, chill serving glasses in the refrigerator before use.

Garnish and Enjoy
