Recipe Notes
Additional Tips
- For extra crispiness, after draining canned chickpeas or boiling dried ones, pat them completely dry with a kitchen towel before tossing with oil and seasoning—removing as much moisture as possible ensures a crunchy texture.
- Try tossing the chickpeas with a mix of Indian spices like chaat masala, cumin powder, or amchur (dried mango powder) after roasting for a tangy, authentic flavor boost.
- Store roasted chickpeas in an airtight container at room temperature for up to a week; if they start to lose their crunch, re-toast them in the oven for 5-7 minutes to revive their texture.
- For a unique variation, sprinkle freshly chopped curry leaves or finely grated lemon zest over the hot chickpeas right after roasting for an aromatic and zesty finish.
